This 9 inch Chef’s knife has a blade forged from EN42J Carbon Steel (a UK equivalent of 1080)
During the forging the blade is drawn out into a gradual taper, making a blade that is thin near the tip and retains some of its thickness where it meets the handle. This leads to a much more balanced blade. The blade has been differentially hardened by quenching the edge in oil, giving it a distinct Hamon (that is line between the hardened and unhardened steel.)
This technique allows the edge to be hard whilst the spine is soft.
The handle is made from walnut, buffalo horn and bone.
Blade length 9 inches, width just over 2 3/4 inches wide and 3mm thick at the handle.
